Easy peasy recipes

So, easy peasy recipes that even I, who can’t cook (for reference: here, here, here, and here) can’t screw up.

Egg tortilla:

Put butter in a skillet on the stove (I use I Can’t Believe It’s Not Butter Spray).

Crack as many eggs as you want into the skillet.

Swirl them all around with a spatula, and sprinkle on pepper.

Turn on the stove and cook the eggs. When they start to get mostly done, add cheese. I like to use shredded cheese and goat cheese.

Let the eggs finish all the way, then use the spatula to out the scrambles eggs into a tortilla.

Eat and enjoy!

Ingredients:

  • Eggs (however many you want)
  • Butter
  • Pepper
  • Cheese
  • Tortilla

Salmon and rice with egg:

Buy 1 lb of salmon of your choice, whether it be ready to eat or needing to be cooked. If it needs to be cooked, follow the directions on the packaging. (Personally, I’ve done this recipe with both ready to eat or needing to be cooked, and it turns out the same. Sometimes I just don’t want to wait for the salmon to cook, depending on how hungry I am.)

Take an avocado, peel, and cut into small pieces on a plate.

Put 2 cups of instant rice in a large bowl. Add two cups of water and stick it in the microwave for 8 minutes.

Take a skillet, add butter (again, my go to is butter spray), and crack 4 eggs, careful not to break the yolk. Turn the burner on low.

When the white of the eggs starts to congeal, but the egg yolk still looks runny, turn off the burner.

Now the rice should be done in the microwave. Pull out the rice bowl and set on the counter. Be careful—the bowl will be hot.

Take the skillet and dump the eggs over easy into the rice bowl. Add the avocado pieces and mix well with a fork.

Now to add the salmon. Flake off the salmon into small chunks and add to the mixture. Once all the salmon is added, mix again thoroughly.

Add soy sauce for taste.

Note: If you save some for the next day, it tastes even more delicious (in my opinion) as the egg and soy sauce has been absorbed into the rice.

Ingredients:

  • Salmon (around 1 lb)
  • 4 eggs
  • Butter
  • 1 large avocado
  • Instant rice
  • Soy sauce

Banana Wrap:

 Take a tortilla and smear a hazelnut or peanut butter mix onto it. I looove the cookies and crème hazelnut spread, but the store was out when I last went, so I am trying out the chocolate cheesecake mix.

Take one banana, cut up, and put the pieces on top of the tortilla.

Wrap it all up and enjoy!

Note: I mostly use this for dessert, not necessarily for a meal.

Ingredients:

  • 1 banana
  • 1 torilla
  • However much Nutella/peanut butter you want to use

Yogurt Oatmeal:

Add ½ cup of oats to a container with a lid.

Add as many blueberries you want.

Pour milk into the container until all the oats are covered.

Seal the lid on the container and place in the refrigerator overnight.

In the morning, take the container out of the refrigerator.

Add however much yogurt you want. I like to use Greek Yogurt Honey Vanilla.

Add honey for additional taste.

Ingredients:

  • ½ cup of oats
  • Blueberries
  • Milk
  • Yogurt
  • Honey

I know these recipes are simple, but that’s what I was going for. Nothing fancy, they satisfy my hunger, and are hard to screw up.
